Basic Raclette Recipe

1 large wedge raclette preferably Gomser, Conches or Bagnes if you can find it. (about 1 pound)

1 dozen cooked small new potatoes, unpeeled

Assorted pickled garnishes: cornishons, pickled onions, caper berries

1/2 pound sliced Bundnerfleisch (air dried beef)

1 kg Raclette potatoes (small, even-sized potatoes)



800 g Raclette cheese in slices



Usual trimmings:



鈥herkins

鈥ilverskin onions

鈥ixed pickles

鈥reshly milled pepper

鈥aprika

Preparing and serving Raclette: Boil the potatoes in their jackets. Line a basket or bowl with a napkin and wrap the hot potatoes in it to keep them warm. Cut the Raclette cheese into pan-sized slices and set them out on a dish. Put bowls of trimmings, a pepper mill and paprika on the table.
