Potatoes Raclette
1 pound Potatoes, peeled and cut into 1/4-inch slices
Salt and pepper
8 ounces Raclette
(If raclette is not available, you can substitute
Gruyere or domestic Swiss cheese.)
3/4 cup Cream
Pre-heat the oven to 375.
Lightly grease a medium casserole dish.
Place 1/3 of the potatoes in the dish, season, and
top with 1/3 of the cheese.
Repeat two more times.
Pour on the cream.
Cover and bake for 45 minutes.
Remove the cover and bake 15 minutes longer.
Allow to cool slightly before serving.

WW Salad
1 package mixed salad greens or butter lettuce, washed
2 1/2 tablespoons pumpkin seed oil or your favorite flavored olive oil
Scant teaspoon apple cider vinegar
Pinch Kosher salt
1/2 cup pumpkin seeds
Raclette or soft pecorino cheese or Port Salut - cut into slices about 1/8 inch
thick
Pinch black pepper
Heat a medium skillet, add the pumpkin seeds and toast until they begin to "pop"
and turn slightly brown. Remove from the heat and set aside.
Place the salad greens in a large bowl and add the kosher salt and mix the
greens. Add enough oil to just coat the leaves then toss. Don't over oil. Add
the apple cider vinegar and toss well. Add pepper.
Place a slice of cheese near the edge of one side of the plate and heat in the
microwave until melted and bubbly, approximately 20 seconds. Place some of the
pumpkin seeds then salad on the plate.
Garnish over the salad with the more toasted pumpkin seeds.
Layered Potato Surprise
4 to 5 medium boiling potatoes, unpared
Boiling salted water
1 pkg ( 2.5 oz) thinly sliced smoked beef
1/2 lb. raclette, mild brick cheese or Cheddar cheese, sliced
Sliced dill pickle, optional, for garnish
Chopped parsley, optional, for garnish
Cook the potatoes until tender in boiling salted water that just
covers potatoes. Drain. Cool until you can handle them.
Meanwhile, butter an 8 or 9 inch shallow pie pan or quiche pan.
Line the pan with smoked beef, bringing the beef slices about 1/2
inch up the sides of the pan.
Peel and cut the potatoes into 1/2 inch slices. Arrange over the beef.
Arrange the cheese slices over the top.
Just before serving, broil 4 inches from the source of the heat for 2
to 3 minutes until the cheese is melted and bubbly.

I have a raclette, I love it! I use it with different cheeses and meats, vegetables, fruits and breads.
Desserts
Savoy-style Pears
Peel, halve and core the pears and thinly slice. Melt butter in raclette dish and arrange the pears in a fan shape. Sprinkle with sugar and cook for a few minutes on top of the grill top until the pears are just soft. Pour some cream over them and slide the pans under the grill and cook gently until the sauce is slightly caramelized.
You can substitute pears for baking apples and add cinnamon for extra flavor.
Orange Cake
Lightly toast both sides of a slice of sponge cake. Place a slice in the raclette dish and, if desired, sprinkle with some orange liqueur. Slice an orange thinly, remove the pith, halve and arrange over lapping slices on the cake. Sprinkle thickly with coarse, raw sugar and bake under the grill for 5 鈥?6 minutes.
You can substitute oranges for peaches for a fresh summer flavor..
Original Raclette Recipe

For 4 Persons.
8 small/medium potatoes
700g Raclette Cheese
1 jar pickled gherkin cucumbers (cornichons)
4 small onions (or shallots)
24 slices salami or ham
freshly ground pepper
Other optional ingredients:
leg ham, prosciutto (thin Italian ham), pepperoni(spiced salami), tomatoes, pineapple, capsicum, prawns, fresh or dried herbs, avocado, onions, marinated chicken/beef, mushrooms, celery, asparagus, olives, crusty bread, or salads.
Method
Brush potatoes under running water and place in microwave-proof bowl half filled with luke warm water and cook on high for 6 mins in their skins. Alternatively you can boil the potatoes on the stove top in a pot filled with water for approximately 18mins on high.
Remove the rind (outer surface) from the cheese. You will need a sharp knife to remove the rind. Once the rind is removed slice 2mm thick slices (thinner if preferred) from the block using a knife or wire cheese slicer. Place on a serving dish, cover with plastic wrap and refrigerate until required.
Arrange gherkins, onions and salami/ham on a platter and set aside until required.
When ready to serve, set table and place raclette grill in the centre of your table and placed cooked potatoes on top of raclette grill in metal bowl or saucepan with lid to keep warm and place gherkins, onions and cheese on table.
Turn raclette grill on to begin to heat up (takes only a minute or two). Each guest takes a slice of cheese, places it in their pan and slides it under the raclette grill to melt. It takes approximately 2 mins to melt to a creamy consistency and 3 mins for a more crispier top. In the meantime take a potato, place onto your plate and cut it into a few pieces and take out the pan from under the grill once it's reached it's preferred consistency and hold the pan onto its side to scrape the cheese out using your wooden spatula. Non- stick pans will allow the cheese to just slide off.
Season to taste with freshly ground pepper.
Hints
The rind of raclette cheese may be hard to cut through with conventional cheese wire cutters. As you hack away at the rind with your sharp knife be careful to remove just a little of the outer surface of the cheese. It can be quite tricky. We didn't say that there wont be any work involved! The vegetable peeler is handy to remove the curved edge side of the cheese block.
Accompanying ingredients (gherkins, onions, herbs, spices etc.) can also be heated under the grill together with the cheese at the same time.
In Australia the most common potato variety is Sebago which comes brushed (unwashed) or washed (sometimes called "new") but why not try other potato varieties which are even tastier like :
-Kipfler : cigar shaped, yellow skin, meaty flesh.
-Nicola : oblong-long shaped, rich yellow skin, yellow flesh.
-Bintje : oblong - long shape, cream coloured skin, light yellow flesh
-Desire :round, pink skin, pale yellow flesh.

can buy grills and put thin slices of raclette cheese in to melt and then eat as above. for a change add paprika or cayenne pepper to cheese before it melts

There are various kinds of raclette cheese .... and as answerer #1 said it is melted, scraped off the larger piece of cheese when exposed to heat, and eaten with potatoes and pickles ... if you wish you can type in: iGourmet.com and then type in the upper right hand corner: raclette cheese and there you will find cheese and a raclette scraper and other information about the traditions of raclette.....oh, you also can buy it online .... it is a great source of good things to eat (iGourmet, that is)
