How to cook with a raclette grill?

After hearing several people talking about raclette grills, they seem like a great idea for when you want to invite people over for a meal without having to cook so much!



Anyway, I've just got one and although I've heard about them, I've never actually experienced using one, so was looking for some inspiration.



What foods are traditionally used with them? How do you normally set the table up even? Basically tell me everything you know!!How to cook with a raclette grill?
A Raclette is very similar to a fondue pot. You would setup your table so that each guest has easy access to the grill.



I'd suggest putting all ingredients on serving platters so that every guest can easily reach them. If you need to, have multiple platters each with all ingredients.



Regarding what to make ... that depends on your guests. Basically, it's a mini grill for everyone. I'd suggest breads, cheeses, sausages, some cut veggies, anything that doesn't require full cooking so that your guests can put their goodies on the grill and eat quickly.

Raclette means scraping. Traditionally, in the Alps, you take a large lump of cheese, put it on a clean stone in front of an open fire. As the cheese melts you scrape of a portion and eat it with potatoes which have been boiled in their skins and kept warm beside the fire.

Each person places a slice of cheese on the little pans which come with electric raclette grills,seasons it according to taste with black pepper from the mill and paprika, places it under the grill and when it is melted scrapes it off the pan using the wooden or plastic scraper provided over the warm potatoes. You can serve a variety of pickled gherkins, onions, piccalilli as accompaniments.



If your grill has a type of griddle pan on the top, you can of course add bacon, tomatoes, mushrooms to the accompaniments.

A dry white wine is essential



An alternative is to use the top (griddle) on it's own. Meat should be good quality (pork fillet, entrec么te, best lamb) and moistened with olive oil before the cooking process. You could also present king prawns. Your guests take the pieces of meat/crustaceans and place them on the griddle until they think they are cooked. Accompany this type of meal with salad and rice, bulgur wheat or cous-cous. This is not raclette!
